Can someone please point us to a step by step guide for assembling the game elements? As well as heights to be used for the field elements such as loop gates while setting up the field?

There is a postcard in the box of game elements (in the bag with the blue pillars) that has a QR code that will lead you directly to the instructions. Here is the direct link.
In the Competition Manual, Appendix A and B have details on the Competition Field Layout.
